Our Italian saffron is produced by a family owned saffron farm in Sardara, a town located in the center-west of Sardinia, Italy. The production of saffron in the island of Sardinia and especially in Sardara is a tradition that longs since centuries. Saffron farmers in this region are known as the best saffron cultivators in Italy. More than 60% of Italian saffron is produced in this region.

According to the producing farm's report this saffron is produced in a biologic way avoiding the use of chemicals of every kind (synthetic fertilizers, herbicides and chemicals against parasites) and all the cares were provided by manual techniques. The drying threads procedure is performed slowly by the sun irradiation in sieves all according to the traditional techniques that avoid the use of ovens and dryers preserving the best flavors and organoleptic properties.

The threads of this organic saffron are long with dark red color similar to the color of Kashmiri saffron threads. Small amount of yellow (called "style") are attached to the threads where the three threads are joined together.
